On the corner of Third and E Streets, in DC’s Judiciary Square neighborhood, there’s a breakfast and lunch place where the tables gleam, the service is impeccable, and the food is served fresh daily. You’d never guess that the kitchen staff is engaged in “on-the-job” training and that the restaurant is also a program for the chronically unemployed or homeless. Third and Eats Restaurant is the home of a culinary arts training program, a project of (and partner with) Community Family Life Services. The 16-week training is comprehensive: orientation stresses team building, good work habits, and professionalism, while the program itself covers everything from commercial food sanitation and preparation to portion control and customer service skills. Job search assistance, life skills instruction, and access to support services follow. Trainees graduate with a Food Sanitation License and so far the restaurant has graduated 350 people, 86% of whom have gone on to find jobs in the industry. It costs $3,500 to bring a trainee to graduation and place him or her in a job; graduates earn a minimum of $18,000 a year – an unbeatable investment.
